Cod and Bell Pepper Stir-Fry

Instructions

  • 1.   Peel and finely chop the onion and garlic. Wash the bell peppers, remove the seeds, and dice the flesh into small pieces.
  • 2.   Heat the wok with olive oil. Sauté the onion and garlic. Add the diced bell peppers, ginger, and chili. Mix and cook for 10 minutes.
  • 3.   Add the tomatoes, coconut milk, honey, and saffron. Let it simmer on low heat for 5 minutes. Place the cod fillets on top of the vegetables and cover. Cook for approximately 8 minutes.
