2. Peel and cut the sweet potatoes into medium-sized cubes. Place the cubes in the boiling water for 25 to 30 minutes. Drain at the end of cooking and let cool slightly.
3. Mash the cooked sweet potatoes with a potato masher, then add the egg, flour, salt, and pepper. Mix well until a homogeneous dough is obtained.
4. Preheat the waffle iron to high heat, but not the maximum setting. Lightly oil the plates with a kitchen brush, then pour the batter. Cook for about 7 minutes (note that cooking time may vary depending on the waffle iron).
