Sweet Potato Waffle Burger

Instructions

  • 1.   Bring a large pot of water to a boil.
  • 2.   Peel and cut the sweet potatoes into medium-sized cubes. Place the cubes in the boiling water for 25 to 30 minutes. Drain at the end of cooking and let cool slightly.
  • 3.   Mash the cooked sweet potatoes with a potato masher, then add the egg, flour, salt, and pepper. Mix well until a homogeneous dough is obtained.
  • 4.   Preheat the waffle iron to high heat, but not the maximum setting. Lightly oil the plates with a kitchen brush, then pour the batter. Cook for about 7 minutes (note that cooking time may vary depending on the waffle iron).
  • 5.   All that's left is to assemble the burger, ready to be devoured!

  • 3 fried eggs
  • 1 handful of lettuce
