Chicken Noodles with Sesame Sauce

Instructions

  • 1.   Sesame Sauce.

    Place 2 to 4 cloves of garlic in the Thermomix bowl (depending on their size and your taste). Chop them for 5 seconds/speed 8.
    Add 60 g of water, 40 g of tahini, 3 tablespoons of soy sauce, 1 tablespoon of dark rice vinegar (or balsamic vinegar if unavailable), 4 tablespoons of neutral vegetable oil, a pinch of chili paste, 1 tablespoon of sugar, and 1/4 tablespoon of salt. Mix everything for 20 seconds/speed 3 and set aside.
  • 2.   Cooking the beans, chicken, and noodles.

    Place 2 chicken breasts on the Varoma tray and grate 1 to 2 cm of fresh ginger on top.
    Place 400 g of frozen green beans in the Varoma body.
    Put 500 g of water in the Thermomix bowl and add 1 star anise.
    Start steaming for 25 minutes/Varoma/speed 1.
    Meanwhile, cook the noodles in a saucepan according to the instructions on the package.
  • 3.   Finishing

    Make a Sichuan pepper-infused oil by quickly frying 1 teaspoon of Sichuan pepper in 2 tablespoons of peanut oil. Stop cooking as soon as the pepper starts to color.
    Coarsely crush 10 roasted and salted peanuts.
    Rinse the noodles under cold water and let the chicken and beans cool if you are serving the dish cold, as in the original recipe.
    Season the noodles with the Sichuan pepper oil.
    Add the green beans and finely sliced chicken, then the sesame sauce. Mix well and serve sprinkled with crushed peanuts.

  • 1 pinch of chili paste
  • 1 tablespoon of brown sugar
  • ¼ tablespoon of salt
  • 2 chicken breast
  • 1 sprig of fresh ginger
  • 400 g of green bean
  • 10 unsalted roasted peanut
  • 250 g of Chinese noodle
  • 1 small star anise
  • 1 teaspoon of whole Sichuan pepper
  • 2 tablespoon of peanut oil
