Harira in the Thermomix

A nourishing and flavorful Moroccan soup. During Ramadan, harira is served daily and traditionally offered to the poor. Nowadays, it can even be found in gourmet restaurants. Enjoy it by adding a squeeze of lemon to your portion. Be careful not to add lemon juice to the entire preparation, as it will be difficult to eat the next day, if any leftovers remain.

Instructions

  • 1.   Put 100 grams of lentils in a container.
  • 2.   Fill the container with cold water.
  • 3.   Let it soak for 2 hours.
  • 4.   Put 400 grams of chickpeas in a saucepan.
  • 5.   Cook the chickpeas in boiling water.
  • 6.   Put 8 sprigs of fresh parsley and 8 sprigs of fresh coriander in the Thermomix. Mix for 5 sec/speed 7.
  • 7.   Set aside.
  • 8.   Add 30 grams of flour, 400 grams of peeled tomatoes with juice, and 3 tablespoons of tomato paste to the Thermomix. Mix for 10 sec/speed 8.
  • 9.   Set aside.
  • 10.   Add 2 onions cut in half, 1 clove of garlic, and 2 celery stalks to the Thermomix. Mix for 5 sec/speed 5.
  • 11.   Add 300 grams of lamb meat to the Thermomix.
  • 12.   Add the cooked chickpeas and lentils.
  • 13.   Add 1 tablespoon of ras el hanout, 2 teaspoons of salt, and 800 grams of water to the Thermomix. Cook for 25 min/100°C//speed 1.
  • 14.   Add the flour/tomato mixture and the herbs.
  • 15.   Cook for 10 min/100°C//speed 1.
  • 16.   Serve hot.
