1. Unroll the puff pastry.
2. Cover it with slices of bacon and thinly sliced goat cheese log.
3. Roll the pastry halfway. Repeat with the other half to join the two sides.
4. Place it in the freezer for about ten minutes to firm up the pastry (otherwise it would be impossible to cut).
5. Then, cut it into small slices: you have your ready-to-bake puff pastry palmiers!
6. Bake for about 15 minutes at 200°C (392°F), thermostat 6-7 (keep an eye on your palmiers as it depends on your oven).
