Burgundy Fondue

A very convivial dish, Burgundy Fondue is loved by the biggest carnivores at our tables for dinner, but not only! We love its participatory aspect: everyone prepares their own pieces of meat, skewered and dipped in oil, according to their own taste. And its playful side, because whoever loses their piece of meat in the caquelon will have a forfeit! It's a dish that warms the hearts during winter, and always delights.

Instructions

  • 1.   Cut the meat into small cubes that will be easy to skewer. Peel the garlic clove and rub the inside of a caquelon with it. Leave it in the caquelon and sprinkle a pinch of salt on the bottom and season with pepper.
  • 2.   Pour the oil into a saucepan and heat it with the sprig of rosemary, the branch of thyme, and the bay leaf, then remove them and pour the oil very slowly into the caquelon. Place it very stably on a table burner to maintain a constant temperature of the oil.
  • 3.   Each person will then skewer their pieces of beef using long skewers or forks designed for this purpose and dip them in the hot oil, cooking the meat to their liking.
  • 4.   Burgundy Fondue is always accompanied by various sauces: mustard, mayonnaise, pepper sauce, tartar sauce, béarnaise, bourguignonne, barbecue, spicy ketchup... Serve this dish of red meat to your guests, with delicious homemade fries and a green salad with vinaigrette.
