Leek and Ham Gratin with Cancoillotte Cheese

Instructions

  • 1.   Peel and finely chop the shallot. Wash and cut the leeks into thin slices.
  • 2.   In a large skillet, heat a drizzle of olive oil and sauté the shallot for a few minutes. Then add the leeks, a drizzle of water, salt and pepper, cover and cook over low heat for about 20 minutes.
  • 3.   Preheat the oven to 180°C (350°F).
  • 4.   Beat the eggs in an omelette, add the milk and the cancoillotte cheese (quickly melt it in the microwave to incorporate it more easily), salt, pepper, and cornstarch, mix well.
  • 5.   Cut the ham into small pieces or roughly chop it, then mix it with the leeks.
  • 6.   In individual small dishes or a large dish for a family version, distribute the leek/ham mixture and then cover with the liquid mixture, sprinkle with grated cheese.
  • 7.   Bake for 25 to 30 minutes, checking towards the end of cooking time (add about 10 minutes if using a large dish).

  • 1 tablespoon of Cornstarch
  • 120 g of cancoillotte
  • 50 g of grated cheese
  • 10 g of olive oil
  • salt (according to taste)
  • pepper (according to taste)
