1. Peel and finely chop the shallot. Wash and cut the leeks into thin slices.
2. In a large skillet, heat a drizzle of olive oil and sauté the shallot for a few minutes. Then add the leeks, a drizzle of water, salt and pepper, cover and cook over low heat for about 20 minutes.
3. Preheat the oven to 180°C (350°F).
4. Beat the eggs in an omelette, add the milk and the cancoillotte cheese (quickly melt it in the microwave to incorporate it more easily), salt, pepper, and cornstarch, mix well.
5. Cut the ham into small pieces or roughly chop it, then mix it with the leeks.
6. In individual small dishes or a large dish for a family version, distribute the leek/ham mixture and then cover with the liquid mixture, sprinkle with grated cheese.
7. Bake for 25 to 30 minutes, checking towards the end of cooking time (add about 10 minutes if using a large dish).
