Pineapple and Chicken Skewers Medley

Serve with basmati rice. During cooking, sprinkle with beet threads to add a touch of color.

Instructions

  • 1.   Cut the chicken breasts into cubes and marinate them for 15 minutes in coconut milk and the juice of half a lemon.
  • 2.   Separately, marinate the pineapple pieces for 15 minutes in the juice of the remaining half lemon.
  • 3.   Thread the chicken cubes and pineapple pieces onto skewers, alternating between them.
  • 4.   Cook on the barbecue or in the oven at 210°C (425°F) for 15 minutes.
  • 5.   Serve.
