Veal Blanquette

Instructions

  • 1.   Cut the onions, carrots, and meat.
  • 2.   Brown the meat in butter, add the onions and brown them.
  • 3.   Add the broth (meat+vegetable) when the meat and onions are well browned, add the carrots.
    Let it cook for 1 hour 30 minutes to 2 hours.
  • 4.   Once the meat is well cooked (when you pinch it, it falls apart), set aside the meat and add the butter and flour. Stir well and let it cook for another 20 minutes until the sauce thickens.
  • 5.   In a bowl, mix the egg yolk, cream, and lemon.
    Add a little bit of sauce.
    Then pour the mixture into the sauce and bring to a boil.
    Add the meat and mushrooms.
    Let it cook for 5 minutes.
    It's ready. Serve with rice.
