Instructions

  • 1.   In advance, place the pieces of meat in a casserole dish with the onion studded with the clove and the bouquet garni. Season with coarse salt, cover with cold water, bring to a boil and let simmer for 2 minutes, skimming off any impurities.
  • 2.   Prepare the vegetables: peel the carrots and turnips, lightly split the leeks before rinsing them, trim the celery stalk and cut it into pieces. Put the vegetables in the casserole dish, sprinkle with veal stock, cover with enough water and bring to a boil. Let simmer for 25 minutes over low heat and covered.
  • 3.   Drain the meat and vegetables, strain 25 cl of broth and pour it into a saucepan. Return the meat and vegetables to the casserole dish to keep warm. Bring the broth to a boil. Add the cornstarch diluted in the cream and thicken for 2 to 3 minutes over low heat. Pour in the lemon juice, adjust the seasoning with salt and pepper. Coat the meat and vegetables with the sauce. Reserve under the lid until ready to serve.
  • 4.   Just before serving, sprinkle with flat-leaf parsley.

  • 1 teaspoon of parsley
  • 1 pinch of pepper
  • 1 pinch of salt
  • 4 carrots
