. Clean and wash the princess beans.

. Peel and wash the potatoes and onions.

. Slice the onions. Cut the potatoes lengthwise and then into halves or more.

. Heat two pots of salted boiling water.

. In the first pot, immerse the beans and cook for 20 minutes.

. In the second pot, put the potatoes and let them cook for 20 minutes.

. Remove the bacon rinds and cut them into lardons.

. Heat a pan and brown the lardons. Remove them with a slotted spoon. Then brown the onions in the same pan.

. Drain the beans and potatoes.

. Dry the potatoes for 1 minute.

. In a salad bowl, place the beans, potatoes, lardons, and onions. Keep warm.

. Dissolve the flour in vinegar and water.

. Pour this mixture into the pan. Heat for 2 to 3 minutes. Season with salt and pepper.

. When the sauce starts to thicken, pour it over the beans.
