Liège Salad

Instructions

  • 1.   Clean and wash the princess beans.
  • 2.   Peel and wash the potatoes and onions.
  • 3.   Slice the onions. Cut the potatoes lengthwise and then into halves or more.
  • 4.   Heat two pots of salted boiling water.
  • 5.   In the first pot, immerse the beans and cook for 20 minutes.
  • 6.   In the second pot, put the potatoes and let them cook for 20 minutes.
  • 7.   Remove the bacon rinds and cut them into lardons.
  • 8.   Heat a pan and brown the lardons. Remove them with a slotted spoon. Then brown the onions in the same pan.
  • 9.   Drain the beans and potatoes.
  • 10.   Dry the potatoes for 1 minute.
  • 11.   In a salad bowl, place the beans, potatoes, lardons, and onions. Keep warm.
  • 12.   Dissolve the flour in vinegar and water.
  • 13.   Pour this mixture into the pan. Heat for 2 to 3 minutes. Season with salt and pepper.
  • 14.   When the sauce starts to thicken, pour it over the beans.

  • 1 kg of firm-fleshed potato
  • 6 slice of smoked bacon
  • 3 onions
  • 25 ml of water
  • 50 ml of vinegar
  • salt (according to taste)
  • pepper (according to taste)
