Bacon and Egg Cocotte in a Potato Nest

Instructions

  • 1.   In a skillet, heat one tablespoon of olive oil over medium heat.
  • 2.   Sauté the grated potatoes until they start to lightly brown.
  • 3.   Preheat the oven to 220°C (425°F).
  • 4.   Let cool in a bowl, then add the grated cheese and the remaining oil. Season with salt and pepper.
  • 5.   Mix well, then line the indentations of a muffin tin (greased or silicone) to form a nest.
  • 6.   Bake for about 15 minutes.
  • 7.   After removing from the oven, crack an egg into each nest, then season with salt and pepper.
  • 8.   Cut the bacon into small dice and distribute it on each nest along with the chopped parsley.
  • 9.   Bake for an additional 15 minutes.
    Serve immediately.
