1. In a skillet, heat one tablespoon of olive oil over medium heat.
2. Sauté the grated potatoes until they start to lightly brown.
3. Preheat the oven to 220°C (425°F).
4. Let cool in a bowl, then add the grated cheese and the remaining oil. Season with salt and pepper.
5. Mix well, then line the indentations of a muffin tin (greased or silicone) to form a nest.
6. Bake for about 15 minutes.
7. After removing from the oven, crack an egg into each nest, then season with salt and pepper.
8. Cut the bacon into small dice and distribute it on each nest along with the chopped parsley.
9. Bake for an additional 15 minutes.
Serve immediately.
