1. For the cauliflower mousse:
Rehydrate the gelatin in cold water for 10 minutes.
Put the cauliflower in a pressure cooker and cook for 10 to 15 minutes once the pot is pressurized.
Heat the cream and dissolve the drained gelatin in it.
Blend the cooked cauliflower with the egg white, nutmeg, and cream.
2. For the carrot mousse + the sun:
Rehydrate the gelatin in cold water for 10 minutes.
Peel the carrots and set aside 2. Cut the rest into pieces and cook in the pressure cooker for 10 minutes.
Like with the cauliflower, heat the cream and dissolve the gelatin in it. Blend all the ingredients except the two whole carrots. Set aside.
3. For the broccoli mousse and the trees:
Rehydrate the gelatin in cold water for 10 minutes.
Cook the broccoli in the pressure cooker for 7 minutes.
Once cooked, take some florets for the trees.
Heat the cream and melt the gelatin in it. Blend all the ingredients to obtain the broccoli mousse.
4. In a loaf pan lined with parchment paper, place a layer of cauliflower mousse. Place the carrot to form the sun, and the broccoli florets to shape the trees. Pour the remaining cauliflower mousse. Smooth it out to obtain a smooth layer. Pour the carrot mousse and finish with the broccoli mousse.
