Roasted Quails with Herbs and Lemon

. Preheat the oven to 180°C (350°F).

. Stuff the quails with sausage meat.

. In a bowl, mix olive oil, mustard, and lemon juice.
Brush the quails with this mixture.

. Place a sprig of thyme on each quail and tie them up.

. Put the quails in a baking dish.
Add lemon slices and the remaining contents of the bowl.

. Bake for 25 to 30 minutes.
