Leek and Bacon Ramekins

. Preheat the oven to 180°C (350°F).

. Wash and slice the leek. Sauté it in a pan with olive oil, covered, for 5 minutes.

. Add the rinsed and chopped mushrooms, then continue cooking for 5 minutes.

. Beat the eggs in a bowl. Add the chopped bacon, sour cream, salt, and pepper. Mix well.

. Divide the mixture into 4 ramekins.

. Bake for 25 minutes. Serve hot with a salad.
