1. Wash and deseed the peppers, then cut them into strips.
2. Peel and slice the onions.
3. Cut the chorizo into slices.
4. In a pan, sauté the onions and peppers in olive oil.
5. Cook the rice in a pot of boiling water.
6. Drain the rice.
7. Add it to the vegetables.
8. Season with salt and pepper, then add the spice mixture.
9. Add the chorizo slices.
10. Finish cooking over very low heat for a few minutes, stirring constantly.
