Sautéed Spicy Chicken with Zucchini

If you find that zucchini is rather bland, try this flavorful recipe that will make you fall in love with this vegetable again. A light recipe!

Instructions

  • 1.   Cut the chicken into pieces.
  • 2.   In a sauté pan, sauté the minced shallots in olive oil.
  • 3.   Add the garlic and sauté for a few moments, then add the chicken.
  • 4.   Add the spices, agave syrup, chopped chives, and continue to brown for a few moments.
  • 5.   Cut the zucchini into pieces and add them to the sauté pan, letting them brown for a few minutes.
  • 6.   Add the tomato pulp and halved cherry tomatoes.
  • 7.   Add a glass of water and let simmer for 15 minutes.
  • 8.   Serve with rice or fresh pasta.

Notes & Suggestions

  • You can replace agave syrup with honey.

  • 300 g of chicken breast
  • 3 zucchinis
  • 2 shallots
  • 1 tablespoon of olive oil
  • ½ crushed tomatoes
  • 2 garlic cloves
  • 1 handful of cherry tomato
  • 1 tablespoon of agave syrup
  • 1 teaspoon of sweet paprika
  • 2 pinch of dried oregano
  • ½ teaspoon of ground cumin
  • 1 tablespoon of fresh chives
  • 1 glass of water
  • salt (according to taste)
  • pepper (according to taste)
