Grilled chorizo omelette and spinach sprouts

Instructions

  • 1.   Heat a pan and sear the slices of chorizo. They must brown and reduce a little. Book.
  • 2.   Put the spinach in the pan and wait until they reduce.
  • 3.   Meanwhile, beat eggs in a bowl with salt, pepper and paprika until smooth and slightly fluffy.
  • 4.   When the spinach has reduced, cut the chorizo into small pieces and add to the pan. Mix. Add the eggs and cook for 2 minutes over medium heat.
  • 5.   For the cooking time, it will depend on whether you like your slobbering omelette or not.

Notes

  • I will advise you slobbery to avoid the "sponge" side, but it's up to you to see. Allow 3 minutes for a slobbering omelette and 5 minutes for a "dry" omelette ...
