Chorizo and Potato Omelette

Instructions

  • 1.   Cut the potato into cubes and parboil them in a pot of boiling water for 5 minutes, then sauté them in a pan with olive oil for 5 minutes.
  • 2.   Slice the chorizo and sauté them without any fat for 5 minutes over high heat.
  • 3.   Beat the eggs in a bowl, season with salt and pepper, then pour everything into a pan. Add the potato cubes, chorizo slices, and cook for 5 minutes. Sprinkle with chopped parsley and serve with a green salad.
