1 | Easy Roast Chicken with Vegetables

To successfully roast a chicken, simply season it well, add garlic, a generous drizzle of olive oil, and some delicious vegetables to accompany it all!

Instructions

  • 1.   Peel and wash the potatoes and carrots. Dry them well with a clean towel and cut them into thick slices.
  • 2.   Then, place them in a large ovenproof dish and add the chicken(s) (cleaned and gutted). Sprinkle with spices, garlic, parsley, and coriander, and drizzle with olive oil. Mix everything well with your hands.
  • 3.   Bake at 210°C (410°F) for about 1 hour (a little longer if the chickens are large, about 1 hour and 30 minutes), in a preheated oven. Baste frequently with the cooking juices and turn the chicken halfway through cooking.
  • 4.   Ten minutes before the end of cooking, add the drained olives and artichoke hearts.
  • 5.   Serve on a large platter and sprinkle with chopped parsley.
