. 1. Peel, core, and cut the apples into quarters. Slice them very thinly using a mandoline.

. 2. Preheat the oven to 180°C/350°F.

. 3. Mix the eggs, flour, salt, and milk. Add the apple slices and mix well to coat them with the mixture.

. 4. Pour the mixture into a tart pan. Press down to compact the mixture. Sprinkle with vanilla sugar.

. 5. Bake for 40 to 45 minutes, checking for browning. Allow to cool completely before serving.
