Jam Shortbread Cookies
You can replace the jam with chocolate spread.

. Mix the softened butter with powdered sugar and vanilla sugar.

. Mix well until you obtain a whitish cream, then add the egg.

. Mix everything together, then add the flour and almond powder.

. Work the dough well until you obtain a ball. Put it in a container and refrigerate for at least 30 minutes.

. Flour the work surface and roll out the dough with a rolling pin. It should not be too thin or too thick.

. Cut out large rounds with a cookie cutter.

. In half of the obtained cookies, make a hole in the center with a smaller cookie cutter.

. Bake for 10 to 15 minutes at 150°C (300°F), they should have a white color.

. Let them cool, then spread jam on the solid cookies.

. Cover with the cookies that have a hole in the center, then sprinkle with powdered sugar.
