Tomato and Mustard Tart

Instructions

  • 1.   Precook the pastry (pricked with a fork) for 10 minutes at 200 °C (392 °F).
  • 2.   Meanwhile, slice the tomatoes thinly.
  • 3.   Remove the pre-cooked pastry from the oven. Spread Dijon mustard on the bottom (classic Dijon mustard works fine).
  • 4.   Arrange the tomato slices, creating multiple layers.
  • 5.   Sprinkle with Herbes de Provence, 2 pinches of salt, and olive oil.
  • 6.   Bake for 20 minutes at 230 °C (446 °F), then cover with aluminum foil for an additional 20 minutes. After these 20 minutes, remove the aluminum foil and let it cook for another 5 minutes with the oven door open.
    Delicious with a green salad.

Notes & Suggestions

  • You can add some diced feta or another cheese and replace the Herbes de Provence with oregano.
