Marinated chicken skewers - Low GI

Instructions

  • 1.   Cut the chicken breasts into pieces and place them in a shallow dish with minced garlic, lemon juice, olive oil, cumin, thyme, salt, and pepper.
  • 2.   Cover with plastic wrap and refrigerate for at least 1 hour.
  • 3.   Wash the bell pepper, remove the seeds and ribs. Cut them into squares. Peel the onions, cut them into quarters.
  • 4.   Prepare the skewers by alternating the pieces of chicken and vegetables. Brush them with the marinade and cook them on the barbecue or under the broiler for 5 minutes on each side.
