WW Tuna and Hard-Boiled Egg Rice Salad

7 ounces of rice

  1. 6 ounces of canned tuna in water
  2. 2 ounces of bell peppers
  3. 2 ounces of cherry tomatoes
  4. 2 ounces of canned corn
  5. 4 ounces of sliced green olives
2 hard-boiled eggs juice of 1/2 lemon 3 chopped mint leaves salt, pepper

Instructions

  • 1.   Cook the rice in salted boiling water according to the instructions on the package. Then drain it.
    Wash the bell peppers, then place them on a baking sheet and bake for about 20 minutes at 350°F.
    Seal the bell peppers in an airtight container or a freezer bag and let them cool.
    Then peel them and cut them into cubes.
    Wash the cherry tomatoes and cut them into quarters, then peel the eggs and cut them into pieces.
    In a large salad bowl, put the rice, eggs, tuna, cherry tomatoes, bell pepper pieces, drained corn, chopped mint, green olives, salt, pepper, and drizzle with lemon juice. Mix everything well.
    Then refrigerate your salad until ready to serve.
