Chicken Thighs with Mushroom Sauce WW

4 skinless chicken thighs (4.2 oz each)

  1. 1 lb button mushrooms
2 shallots 1 tablespoon olive oil
  1. 4 fl oz white wine
  2. 1 fl oz fat-free vegetable broth
  3. 5 oz 4% fat sour cream
salt, pepper

Instructions

  • 1.   Heat the broth and blanch the mushrooms for 3 minutes. Drain them and set the broth aside.
  • 2.   Slice the mushrooms and finely chop the shallots.
  • 3.   In a saucepan, heat the olive oil and sauté the shallots for 3 minutes.
  • 4.   Add the chicken thighs and let them brown for a few minutes.
  • 5.   Then add the white wine and let it evaporate.
  • 6.   Add the mushrooms and pour in 10.1 fl oz of reserved broth. Season with salt and pepper, cover, and let it cook for 25 minutes. Halfway through cooking, turn the chicken thighs.
  • 7.   At the end of cooking, add the sour cream and let it cook for another 5 to 8 minutes.

Notes & Suggestions

  • Serve your chicken thigh dish with cream and mushrooms with cooked rice.
