Salmon Papillote with Tapenade and Quinoa - Low GI

Instructions

  • 1.   Preheat the oven to 210ºF (th7).
  • 2.   Peel and slice the onions. In a pan, sauté them in a little olive oil until golden.
  • 3.   Remove the skin from the salmon fillets. In individual papillotes, place a layer of onions followed by a salmon fillet. Top each salmon fillet with a tablespoon of tapenade and a fillet of anchovy.
  • 4.   Close the papillotes and bake for 10 to 15 minutes.

  • 4 salmon fillets
  • 2 onions
  • 4 tablespoon of olive tapenade
  • 4 anchovies
  • 1 olive oil
