Zucchini/Tomato/Goat Cheese Cake

Instructions

  • 1.   Sauté the zucchini, sliced into thin rounds, in olive oil with finely chopped onion.
  • 2.   Cut the tomatoes and goat cheese into small pieces.
  • 3.   Mix the eggs, flour, and baking powder.
  • 4.   Then add the tomatoes, goat cheese, and zucchini, which should be cut into small pieces after cooking.
  • 5.   Put the mixture in a buttered cake pan (unless using a flexible mold).
  • 6.   Bake for 35 minutes in a preheated oven at 180°C (350°F).

  • The filling proportions are too large => adjust proportions.

  • 100 g of gluten-free flour
  • ½ teaspoon of baking soda
  • 1 olive oil
