Arugula and Goat Cheese Honey Salad

Instructions

  • 1.   Preheat your oven to 180°C (350°F).
  • 2.   Cut the bread into small slices, place a slice of goat cheese on each one. Drizzle some honey over the slices and bake. Keep an eye on your oven until the bread and cheese are nicely golden (usually about 5 minutes).
  • 3.   Arrange arugula in a preferably deep plate. Cut cherry tomatoes in half and place them in the plate, along with the raisins.
  • 4.   Sauté the bacon bits in a little olive oil. You can add a bit of honey to caramelize them. Add them to the salad.
  • 5.   Make a vinaigrette by first mixing a tablespoon of whole grain mustard and two tablespoons of vinegar. Add olive oil and mix well until you obtain a smooth and creamy sauce. Using a spoon, drizzle the salad with the vinaigrette.
  • 6.   Take the slices out of the oven and place them on top of the arugula. All that's left is to enjoy!

  • 200 g of arugula
  • 100 g of raisin
  • 12 cherry tomatoes
  • 200 g of smoked bacon
  • 1 goat cheese log
  • 60 g of honey
  • 4 slice of whole wheat toast
  • 1 tablespoon of whole grain mustard
  • 2 tablespoon of balsamic vinegar
  • 4 tablespoon of olive oil
