Step 1 Beat the eggs with the oil. Step 2 Pour the beaten eggs in the center of the flour and knead, until the dough is homogeneous. Step 3 Continue kneading to develop the elasticity of the dough. Step 4 Cover and let the dough rest between 30 minutes and 1 hour. Step 5 Meanwhile, prepare the ravioli stuffing: mix the slice of ham and add it to the fresh goat cheese. Season with salt, pepper and basil. Step 6 Roll out the rolling pin as finely as possible. Step 7 Cover it and let it rest for at least 1 hour. Step 8 Using a knife, begin to trace the squares on half of the dough, to facilitate the cutting of ravioli. Step 9 Garnish with the stuffing. Step 10 Pass the egg yolk on the parts to be soldered (edge of the ravioli). Step 11 Fold the second part of dough, and using your hands, seal the ravioli tightly around the stuffing. Step 12 Cut the ravioli with a serrated wheel or a sharp knife. Step 13 Heat a large volume of salt water, dip the ravioli in it and cook for about 8 to 10 minutes. Step 14 Drain the ravioli and serve with sauce of your choice.
