Homemade Ravioli

Instructions

    Beat the eggs with the oil.

    Pour the beaten eggs into the center of the flour and knead until the dough is smooth.
    Step 3
    Continue kneading to develop the elasticity of the dough.

    Cover and let the dough rest for 30 minutes to 1 hour.
    Step 5
    Meanwhile, prepare the ravioli filling: blend the slice of ham and incorporate it into the fresh goat cheese. Season with a little salt, pepper, and basil.

    Roll out the dough as thinly as possible with a rolling pin.

    Cover it and let it rest for at least 1 hour.
    Step 8
    Using a knife, start tracing squares on half of the dough to facilitate cutting the ravioli.

    Fill with the filling.

    Brush egg yolk on the parts that will be sealed (edges of the ravioli).

    Fold over the second part of the dough and, using your hands, seal the ravioli tightly around the filling.

    Cut the ravioli using a fluted wheel or, alternatively, a sharp knife.

    Heat a large amount of salted water, plunge the ravioli into it, and let them cook for about 8 to 10 minutes.

    Drain the ravioli and serve them with the sauce of your choice.
