Mediterranean Frittata

Frittata is a traditional Italian dish similar to an omelette, filled with various ingredients such as meat, vegetables, and cheese. Like a traditional omelette, a frittata is prepared in a skillet, cooked on the stovetop, and finished under the broiler.

Instructions

  • 1.   Preheat the oven to 180°C (350°F) (gas mark 2, convection oven: 160°C/320°F).
  • 2.   Cut the zucchini lengthwise into quarters, then slice. Dice the bell pepper.
    Heat the oil in a skillet and grill the vegetables for about 5 minutes.
  • 3.   Mix the eggs, milk, salt, pepper, and thyme, then pour over the vegetables. Cut the feta into cubes and sprinkle on top.
    Let it set for a few minutes, then place the skillet in the oven.
  • 4.   Bake the frittata for 15 to 20 minutes. Cut it into pieces. Delicious!
