Hasselback Chicken

Instructions

  • 1.   Preheat the oven to 200°C (gas mark 3, convection oven: 180°C).
  • 2.   Wash the chicken fillets, drain them, and make six shallow cuts across each fillet without cutting all the way through. Place the chicken in a baking dish. Slice the tomato and mozzarella into six thin slices. Fill the cuts in the chicken with 1 slice of mozzarella, 1 slice of tomato, and 1 basil leaf. Season with salt, pepper, and Italian herbs. Drizzle with oil. Bake for about 25 minutes on the middle rack of the oven.
  • 3.   Cut the cherry tomatoes in half. Finely chop the remaining basil. Mix everything with the balsamic vinaigrette. Serve the tomato salad with the chicken.
