Vegetable Soup with Thermomix

Craving a hot and creamy soup? Nothing beats a vegetable puree to warm up and comfort yourself from the cold. A simple recipe with Thermomix, carrots, zucchini, potatoes, leek, onion, vegetable stock cube, olive oil, salt, pepper, and let's get started with your dinner preparation!

Thermomix Soup

Preparation time: 15 minutes
Cooking time: 25 minutes

Instructions

  • 1.   Peel and cut the onion in half, then cut the carrots and potatoes into pieces. Wash and cut the zucchini and leek into pieces.
  • 2.   Put the onion in the Thermomix bowl and mix for 5 seconds at speed 5.
  • 3.   Add the carrots, zucchini, potatoes, leek, water, vegetable stock cube, olive oil, salt, and pepper. Set the Thermomix to 100°C for 25 minutes at speed 1.
  • 4.   Blend for 1 minute at speed 10, then serve hot.

Notes & Suggestions

  • You can also serve this dish with eggs for a complete meal.

  • 2 medium carrot
  • 1 medium zucchini
  • 2 medium baby potato
  • 1 medium leek white
  • 1 medium onion
  • 400 ml of water
  • 1 meat broth
  • 1 tablespoon of oil
  • salt (according to taste)
  • pepper (according to taste)
