Caramelized Pork

Instructions

  • 1.   Brown the onion with brown sugar in a cast iron pot
  • 2.   Add the pork, cut into pieces, and the diced bacon
  • 3.   Cover and simmer on low heat for 15 minutes, if needed, add a little water
  • 4.   Add the nuoc-mâm sauce, a little salt and pepper
  • 5.   Simmer for 15 minutes

Notes & Suggestions

  • To reheat the next day, even better, bake for about 15 minutes at 180°C while monitoring the juice.

  • 2 onions
  • 120 g of brown sugar
  • 1.2 kg of pork loin
  • 2 slice of pork belly
  • 4 tablespoon of fish sauce
  • salt (according to taste)
  • pepper (according to taste)
