Avocado and Cucumber Tartare

Instructions

  • 1.   Peel the cucumber. Open it and remove the seeds.
  • 2.   Cut the flesh into small cubes. Peel and chop the onions.
  • 3.   Cut the avocados in half. Remove the skin and pit. Mash half of an avocado with a fork in a salad bowl with the onions. Cut the rest into small cubes.
  • 4.   Put the avocado and cucumber cubes in the salad bowl. Squeeze the lime and drizzle the salad with the juice. Emulsify the oil, balsamic vinegar, salt, and pepper.
  • 5.   Arrange and sprinkle with cilantro, then drizzle with a little vinaigrette.

  • 1 bunch of fresh coriander
  • 2 small onion
  • 3 tablespoon of lemon juice
  • 2 tablespoon of balsamic vinegar
  • 1 tablespoon of olive oil
  • 1 pinch of salt and pepper
