Spinach and Mushroom Salad

For a more flavorful dressing, emulsify with a spoonful of oil (walnut or hazelnut). Plain yogurt can be replaced with soy yogurt. Choose your preferred type of ham according to your taste.

Instructions

  • 1.   Optional: cook the eggs soft-boiled or scrambled.
  • 2.   Cut the ham into strips.
    Peel and slice the mushrooms.
    Mix with the spinach (and cooled eggs).
  • 3.   Prepare the dressing by emulsifying the yogurt, mustard, and water.
    Drizzle over the salad. Season to taste. Serve.

  • 2 eggs (optional)
  • 60 g of fresh spinach
  • 60 g of button mushroom
  • On peut remplacer par des restes de poulet cuit (rôti, blanc, cuisse, etc), du jambon sec, des lardons... :
  • 3 slice of chicken ham
  • Vinaigrette :
  • 1 cup of plain yogurt
  • 4 teaspoon of mustard
  • 3 tablespoon of water
