Instructions

1. Cut the bottoms off the endives. Steam them for 10 minutes.
2. Meanwhile, prepare the béchamel sauce by melting the butter in a saucepan. Add the flour and stir well until you have a roux. Off the heat, slowly pour in the milk. Whisk the mixture.
3. Preheat the oven to 240 °C (464 °F).
4. Drain the endives. Put the béchamel sauce back on low heat, add the cream, and whisk until the sauce thickens. Season with salt and pepper.
5. Wrap the endives with ham. Place them in a dish. Cover them with the béchamel sauce and sprinkle with grated cheese.
6. Bake for 20 minutes, until the top is golden brown. Serve hot.
