Instructions

  • 1.   Cut the bottoms off the endives. Steam them for 10 minutes.
  • 2.   Meanwhile, prepare the béchamel sauce by melting the butter in a saucepan. Add the flour and stir well until you have a roux. Off the heat, slowly pour in the milk. Whisk the mixture.
  • 3.   Preheat the oven to 240 °C (464 °F).
  • 4.   Drain the endives. Put the béchamel sauce back on low heat, add the cream, and whisk until the sauce thickens. Season with salt and pepper.
  • 5.   Wrap the endives with ham. Place them in a dish. Cover them with the béchamel sauce and sprinkle with grated cheese.
  • 6.   Bake for 20 minutes, until the top is golden brown. Serve hot.
