Light Lemon Cake

Instructions

  • 1.   Mix everything together with the lemon zest (except for the 3-4 extra tablespoons of sugar).
  • 2.   Lightly butter the mold, pour in the batter and bake for about 25 minutes at 180°C (350°F) (40 minutes if doubling the proportions, which I recommend!).
  • 3.   Dissolve the lemon juice with the extra sugar.
  • 4.   Remove the cake from the mold while still warm and drizzle with the lemon juice.
  • 5.   Enjoy!
