Penne with arugula, pine nuts, and pancetta

Here is a true bouquet of flavors: the bitterness of arugula, the smokiness of pancetta, and the sweetness of pine nuts... Pasta is an endless source of inspiration.

Instructions

  • 1.   Bring a large pot of salted water to a boil. Wash and dry the arugula. Cut the pancetta into thin slices.
  • 2.   Once the water is boiling, add the pasta and cook for 10 minutes. Meanwhile, dry roast the pine nuts in a non-stick skillet.
  • 3.   Remove the pine nuts and set them aside. In the same skillet, grill the pancetta until it curls up and becomes crispy.
  • 4.   Carefully drain the pasta and transfer it to a warm serving dish, if possible. Add the oil and arugula. Season with salt and pepper and mix well.
  • 5.   Sprinkle the pine nuts and pancetta slices on top of the dish. Mix all the ingredients together and serve immediately.

Notes & Suggestions

  • Serve with Parmesan cheese and a plate of Italian charcuterie or cheeses.

  • 400 g of penne
  • 200 g of arugula
  • 8 slice of pancetta
  • 4 tablespoon of olive oil
  • 4 tablespoon of pine nut
  • 1 salt and pepper
