Instructions

  • 1.   Chop the garlic. Put the tomatoes in boiling water for 1 minute and remove the skin. Seed and chop peppers. Seed and crush the tomatoes.
  • 2.   heat the oil in a large pan and add the garlic and pepper. Fry for a few minutes as pepper requires more cooking than tomatoes
  • 3.   Add the tomatoes and spices. Cook for 10-15 minutes. Add a little water if it dries too much. Add salt. Taste and rectify the seasoning, add a teaspoon of sugar if the tomatoes are not sweet enough. You can add a leaf of basil or oregano to perfume.
  • 4.   Break the eggs into a bowl and add slowly and gently, without breaking the yolk in the tomato sauce. Cook another 10 minutes.
  • 5.   Serve hot with fresh bread.
