Chakchouka

Instructions

  • 1.   Finely chop the garlic.
    Place the tomatoes in boiling water for 1 minute and remove the skin.
    Remove the seeds and slice the peppers. Remove the seeds and crush the tomatoes.
  • 2.   Heat the oil in a large skillet and add the garlic and peppers. Fry for a few minutes as the peppers require more cooking time than the tomatoes.
  • 3.   Add the tomatoes and spices. Let it cook for 10-15 minutes. Add a little water if it becomes too dry.
    Add salt.
    Taste and adjust the seasoning, add a teaspoon of sugar if the tomatoes are not sweet enough. You can also add a basil or oregano leaf for flavor.
  • 4.   Crack the eggs into a bowl and slowly and gently add them to the tomato sauce without breaking the yolk. Cook for an additional 10 minutes.
  • 5.   Serve hot with fresh bread.

  • 1 tablespoon of olive oil
  • 1 teaspoon of sweet paprika
  • ½ teaspoon of hot paprika
