Instructions

  • 1.   Beat the eggs with a fork, add salt and pepper.
  • 2.   Heat the butter, pour a little into the eggs and mix. Pour the eggs into the pan over high heat, reduce the heat and let cook gently, bringing the edges of the omelette to the center as they set.
  • 3.   Shake the pan a little to prevent the omelette from sticking, check for a runny or firm texture.
  • 4.   Fold the omelette in half and serve.

Notes & Suggestions

  • To make a lighter omelette, add a tablespoon of water or milk per egg yolk. This will make it more digestible.
