Eggplant and red lentil dhal with Companion

Instructions

  • 1.   Peel the onions. Cut them into quarters using the ultrablade knife, 15 seconds, speed 11 with the Companion.
  • 2.   Replace the ultrablade with the mixer attachment. Add 2 tablespoons of olive oil and start the simmer mode P1 for 5 minutes at 130°C.
  • 3.   Meanwhile, cut the eggplants into cubes. At the end of the program, add the eggplants and drizzle with olive oil. Cook for 10 minutes at speed 3, 100°C.
  • 4.   Then add 300g of lentils, 400ml of coconut milk, 300ml of water, 2 teaspoons of cumin, and 2 teaspoons of turmeric. Cook for 18 minutes at speed 3, 100°C.
  • 5.   At the end of the program, add 3 tablespoons of lemon juice and mix for 30 seconds at speed 3.
