Roasted Root Vegetables

Goes well with red meat. I appreciate this recipe because it allows for substituting classic fries, potatoes, pasta, or rice with vegetables that have a lower glycemic index and are therefore healthier.

Instructions

  • 1.   Place the rack in the center of the oven. Preheat the oven to 180 °C (350 °F).
  • 2.   Wash, peel, and cut the vegetables into large sticks or pieces.
    Put them in an ovenproof dish and mix with the oil.
  • 3.   Bake in the oven, stirring frequently (to prevent burning), for about 50 minutes or until the vegetables are tender.
  • 4.   Finely chop and add the parsley. Season with salt and pepper.

  • 1 raw red beet
  • 1 sweet potato
  • 1 onion
  • 10 stalk of fresh parsley
  • 2 tablespoon of olive oil
  • salt (according to taste)
  • pepper (according to taste)
