Instructions

  • 1.   Cook the eggs for 10 minutes. Lightly crack them with your hands, then put them in cold water.
    Peel the eggs and set aside.
  • 2.   Make the mayonnaise, adding the lemon juice last.
    Separate the egg whites from the yolks.
    Mash the yolks with a fork, add the mayonnaise and mix.
    Finely chop the whites and add them to the yolks, incorporating the minced chives.
  • 3.   Cut the edges off the slices of bread.
    Assemble the sandwiches and cut into 4 pieces.
    Serve on the same day.
