Beef Tartare

Instructions

  • 1.   Cut the meat into small dice.
  • 2.   In a bowl, mix together the egg yolk, Dijon mustard, Worcestershire sauce, ketchup, Tabasco, salt, and pepper.
  • 3.   Add the olive oil while whisking.
  • 4.   Add the meat to the mixture along with the parsley.
  • 5.   Adjust the seasoning if necessary.
  • 6.   Refrigerate or serve immediately.
    This dish can be prepared up to 2 hours in advance.

  • 250 g of beef (loin or bib)
  • 1 teaspoon of Dijon mustard
  • 1 egg yolk
  • 1 tablespoon of chopped onion
  • 1 tablespoon of chopped capers
  • 1 teaspoon of Worcestershire sauce
  • 1 tablespoon of ketchup
  • ¼ teaspoon of tabasco
  • 1 pinch of black pepper
  • 1 pinch of salt
  • 2 tablespoon of olive oil
  • 1 teaspoon of parsley
