No-Bake Lemon Cheesecake

Instructions

  • 1.   Mix the crushed speculoos cookies and melted butter in a bowl, then spread them evenly in a springform pan; press firmly with a spatula, and refrigerate.
  • 2.   Mix the water and sugar in a saucepan, heat until it boils.
  • 3.   Stir in the agar agar while whisking to distribute it evenly.
  • 4.   Let it cool for 5 minutes in a bowl, then mix it into the cream cheese.
  • 5.   Add the lemon juice and mix.
  • 6.   Gently spread this mixture over the speculoos layer in the springform pan (don't worry, it will be a bit liquidy!).
  • 7.   Refrigerate and let it set for 24 hours.

Notes & Suggestions

  • You can add a spoonful of berry coulis or jam on top when serving.
  • If you're watching your weight, you can use 0% fat cream cheese.
