1. Preheat the oven to 180°C (350°F).
2. Remove the stems from the artichokes and cut off the top leaves.
3. Cook them in a pressure cooker for 15 minutes in the basket, partially covered with salted water.
4. Once they are lukewarm, drain them and remove the choke from the inside.
5. To make the stuffing, sauté the minced onion and sausage meat.
6. Pass through a meat grinder (using large holes), add 1 bowl of bread crumbs soaked in milk and an egg.
7. Season with salt, pepper, and nutmeg.
8. Stuff the artichokes.
9. Bake for about 15 minutes at 180°C (350°F) with water in the bottom of the dish and a knob of butter on top of the stuffing.
