Pad Thai

Very popular in Thailand, Pad Thai is a dish of stir-fried rice noodles with a mixture of beaten eggs and peanuts, flavored with fish sauce.

Instructions

  • 1.   Cook the Asian noodles.
  • 2.   Rinse and pluck the cilantro leaves.
    Cut the lemon into quarters.
  • 3.   Wash the green onions with their tops, cut them into sections, and slice them lengthwise.
    Peel and chop the garlic.
  • 4.   Heat a wok (or deep pan) with oil.
    Add the garlic, crushed peanuts, and sliced onions.
    Let them cook for 5 to 6 minutes over high heat, stirring constantly.
  • 5.   Add the shrimp and drained noodles.
    Stir-fry for 3 minutes over high heat.
    Incorporate the beaten egg and a pinch of sugar.
  • 6.   Cook for 2 minutes while stirring.
  • 7.   To serve: drizzle with fish sauce, add a little chili powder, the plucked cilantro leaves, and the lemon quarters.
    Mix and serve hot.

Notes & Suggestions

  • It is possible to use small onions instead of green onions.
    Original recipe uses flat rice noodles, soaked for 30 minutes in a container of warm water.

  • 500 g of peeled shrimp
  • 4 green onions
  • 1 garlic clove
  • 10 sprig of fresh coriander
  • 1 lime
  • 250 g of Chinese noodle
  • 30 g of peanut
  • 1 chili powder
  • 1.5 tablespoon of fish sauce
  • 5 cl of peanut oil
  • 1 egg
  • 1 pinch of powdered sugar
