Tzatziki with Companion

Instructions

  • 1.   Squeeze the lemon. Cut the cucumber in half lengthwise and remove the seeds with a spoon. Cut it into small cubes. Then let it drain in a colander with 1 tbsp of coarse salt for 30 minutes. Rinse and dry on a paper towel.
  • 2.   In the robot with the ultrablade chopping knife, put all the ingredients. Mix at speed 8 for 20 seconds.
  • 3.   Serve chilled with raw vegetables or on toasted bread slices.

Notes & Suggestions

  • If you want a smoother texture, mix for an additional 30 seconds.
