Chicken liver mousse with port wine using the Companion

Instructions

  • 1.   Peel the shallots and put them in the robot equipped with the ultrablade chopper knife. Mix at speed 12 for 10 seconds.
  • 2.   Replace the knife with the mixer. Add 20g of butter, port wine, and chicken livers. Start the simmer program P1 for 12 minutes.
  • 3.   At the end of the program, drain the livers and rinse the bowl with cold water.
  • 4.   Replace the mixer with the ultrablade chopper knife, put the livers back in the robot, add the remaining butter and heavy cream. Season with salt and pepper, and mix at speed 12 for 30 seconds. Using a spatula, scrape the sides of the robot and bring the mixture towards the center. Mix again for 10 seconds (if you want a very smooth texture, mix again).
  • 5.   Pour the mixture into a small terrine and refrigerate for at least 2 hours before serving.

  • 10 cl of thick sour cream
  • 1 pinch of salt and pepper
